Basic Preparation: 1 cup Ziyad brand Freekeh; 5 cups broth or water; 1 tsp olive oil; 1 tsp cumin (optional); salt and pepper to taste. Pick through freekeh, looking for small kernels or foreign objects that may be inedible. Wash freekeh under cold water and pour off any skins that float to the top. Place all ingredients in a medium pot and bring to a boil. Reduce to simmer and cover pot. Allow freekeh to absorb all liquid. You may need to add a little more liquid to achieve desired tenderness. Remove from heat and allow to rest for 5 to 10 minutes. Fluff with a fork and serve. For different variations of this recipe, try adding fresh herbs, spices, and/or vegetables.
